Rooting Android Phones

I'm considering rooting my Galaxy S3. I'd like to be able to mount NFS shares, remove unremovable apps, do complete backups, etc.

Has anyone else done this? I've read that it will void the warranty, but I'm under the impression that it's possible to undo the operation and make it completely impossible to know whether it was ever rooted.

IIRC, rooting does void the warranty, but as you mentioned you can reverse it as needed, but only on some handsets...

I haven't done it, as I haven't had the need to on my handset.
