My machine is crashing and rebooting sometimes during RAW conversion. Is something in there dying out, maybe CPU or the RAM?

You could run a memory tester and FAH to single out each component and see if either is actually to blame. Are you monitoring the temperature while doing the conversion?

Do you have some sort of temperature monitoring program running that you could check? If it is an nVidia chipset, they have the "nVidia Monitor" program that shows CPU, GPU, and NB temps along with all the voltages and clock speeds. Other programs that do the same are Speedfan and the (discontinued?) Motherboard Monitor.

CPU temps are the same as ever, usually around 41°C up to a max of 50°C under continuous load after a while. Nothing has changed in the system for a long time. The fan is fine.

There are a lot of options. Do you run it forever and in which mode?

MemTest86+ has a law of diminishing returns thing going for it. Typically I run it for 2 passes and call it good. Prime95 is good for trying to crash a system as well.

During RAW conversion for a batch? Or just a single image? After how long @ 100% CPU?

What are you using to monitor temps?

I would recommend CoreTemp for C2D or Speedfan for AMD K8. If you aren't using either of these progs, then the numbers reported by them may shock you

In windows, under System properties/advanced you can set the system not to reboot if it crashes. This would help with determining whether it is hardware or software.

I use the supplied Asus software, which reports the same temps in the BIOS. A thermistor on the heatsink reports a few degrees cooler, so I think it is accurate.

I'm not too sure about ASUS or any of the manufacturer proggys, but all of them that I am sure about use the thermistor, so I would confirm temps by running CoreTemp or Speedfan
