After adding a NIC to the ESXi server, do I have to do an upgrade install for the server software to recognize it?

I think you're asking more about ESXi recognizing the NIC vs the GuestOS. You should not have to reinstall to see the new NIC. After rebooting ESXi, it should auto-detect the new NIC assuming it's on the supported hardware list. You should be able to see it in the ESXi console if you go into networking or you can manage it in the vSphere client.

When you go into the vSphere client (or vCenter), you should then be able to go into the network section under configuration and either add a new vSwitch. If the new NIC is there, you should be able to see it as an option when adding the new vSwitch. It will show as not being bound to any other vSwitch and likely called something like vmnic<number>
