If windows there are some definitive books you should read but they've probably all been rereleased as C# books now.
When you say java, do you mean applets, applications, web/server side or J2EE?
If you don't mind vendor specific, and you are interested in web/server side and J2EE, I can highly recommend Enterprise Java programming with IBM WebSphere
From my limited understanding, the ACCUbook review page is supposed to be a good source of information. Hopefully it can point you in some useful directions.
